Hōjicha Tea is distinctive from other Japanese green teas because it is first processed by roasting over charcoal. (Most other Japanese teas are steamed) Firing at high temperature, alters the colour tone from the usual green to a reddish brown.
Roasted flavors dominate, replacing the vegetative tones of green tea, leaving a delightfully toasty, slightly caramel-like flavor. The roasting process also lowers the amount of caffeine, making Hojicha a popular tea to serve during the evening meal or before going to sleep. It is the preferred tea for children and the elderly.
